Charlotte without sugar. Charlotte without sugar: treat yourself to healthy Charlotte pies with stevia

With the onset of autumn, many housewives remember the wonderful recipe for apple charlotte, which has not lost its popularity over the years.

Historical birth of the recipe

The classic one was borrowed from English cookbooks. The modern recipe is slightly different from the original source. Initially, the baked goods looked like fluffy apple pudding topped with various sweet sauces. For example, in Germany, charlotte was baked from ordinary bread with the addition of fruit mass and butter cream. This recipe still exists and enjoys some popularity. Over time, all apple pies made with biscuit dough began to be called charlotte.

Nowadays, cooks have simplified the recipe as much as possible. It has become more accessible, but due to its caloric content, some housewives are forced to refrain from such baking. Then inventive confectioners offered several dietary options by replacing some ingredients.

Charlotte without sugar: reducing calorie content

If you use a calorie calculator, it is easy to find out that a 100-gram piece of sweet dessert contains 200 kcal. In order to reduce the calorie content of any flour product, you need to replace fast carbohydrates (sugar, flour) with calmer ones. For example, honey and stevia are good analogues of sugar. These ingredients are allowed even for diabetics. Dried fruits can also provide additional sweetness. Sugar-free charlotte with apples, pears and dried fruits will look no less attractive.

Reducing the number of yolks

Next, consider an ingredient such as an egg. According to the recipe for the pie, you need 5-7 pieces, from a nutritional point of view this is quite a big overkill. But a way out was found. You can add only proteins to the recipe, and then the calorie content will be significantly reduced, but the biscuit will still rise well.

You can reduce the number of eggs using baking powder or baking soda with lemon juice. Such ingredients will ensure a good height of the sponge cake.

Replace fast carbohydrates with fiber

Charlotte without sugar and yolks is a very real thing. But what about flour? It is practically the main ingredient of the dish. Experience shows that it can also be replaced. For example, so that charlotte with honey and apples without sugar does not lose its taste, you can replace wheat flour with rice or buckwheat. It would also be appropriate to use it. It is not necessary to exclude wheat flour completely; you can replace some of it with healthy foods rich in fiber and vitamins.

Some substitutions and exceptions

You can omit butter from the recipe altogether. No one will notice the absence of such a product. You can add fermented milk products such as kefir to the dessert. To lubricate the mold, it is preferable to use vegetable oil and generously dust the surface with semolina. When working in the kitchen, imagination and common sense are very useful. With the help of such qualities, any, even inexperienced, housewife will be able to make charlotte with apples without sugar, the recipe of which will be begged by grateful guests.

Secrets of a lush dietary biscuit

The main indicator of a quality charlotte is a well-beaten, tall sponge cake. In order to achieve the ideal result, the ingredients must be mixed in a certain sequence. Considering that some products have been replaced with low-calorie ones, the cooking technology will be as follows. First of all, you need to separate the yolks from the whites. Everyone does it as best they can. It is recommended to take eggs from the refrigerator, as chilled whites whip better. Our recipe is called “Charlotte without sugar”, but sweetness should still be in the dessert, so feel free to combine the egg whites with honey and start beating at maximum speed for at least 10 minutes.

Next, all we have to do is add a wheat flour substitute. This is done carefully so that the squirrels do not lose their lush appearance. You need to knead the flour with a spoon; the mixer will no longer be useful. The result should be a mass similar to thick pancake batter.

Dosages:

  • egg whites - 5-6 pieces;
  • (oatmeal, buckwheat, rice) - one glass;
  • honey or any other natural - 1 glass.

Preparing dietary fruit filling

As you know, fruits also have different caloric content. Sugar-free charlotte will be most healthy if you use sour apples as the filling. The Antonovka variety is ideal for this. Such fruits have a fairly dense structure and look aesthetically pleasing in the finished pie.

Pears can also be used in dessert, but they must first be simmered in a frying pan. This applies to hard green varieties.

In order to use dried fruits as a filling, they also need to be prepared first. Well-washed fruits are poured with boiling water and left until the water cools completely. Then the fruits are laid out on a towel and excess moisture is removed. If you don't do this, the bottom of the cake will be too wet and won't bake properly.

Fruits with seeds and tender pulp cannot be used as a filling. It is also worth remembering that when preparing apples and pears, the peel must be peeled. To prevent the prepared fruits from darkening while waiting for pouring, they can be dipped in lightly salted water and dried with a towel before placing.

The prepared batter is poured onto the apples and dried fruits placed in the mold and baked at 200 degrees for 20 minutes.

Charlotte with honey without sugar

As you know, honey is most safely absorbed by the body and is allowed in certain proportions in the diet. You should also know that during heat treatment this product changes its properties and partially loses its benefits. Therefore, you need to be careful when replacing sugar with honey. You can add stevia or fructose to the recipe.

no sugar on kefir

Kefir charlotte without sugar turns out very tasty. Fermented milk products are added to slightly dilute the coarse fiber of buckwheat or oatmeal. This should be done while kneading the flour by hand. According to the classic dessert recipe, you will need 100 ml of kefir. This ingredient adds a slightly perceptible creamy taste to the cake and partially functions as butter.

You can also prepare a diet charlotte with cottage cheese. This product will partially replace flour. Naturally, cottage cheese should be low-fat. This ingredient is added to the dough while manually kneading the flour. Each housewife determines the dosage according to her own taste.

How to make charlotte without sugar: 5 recipes

Pies with berries and fruits are especially popular. This is both food and dessert at the same time. They are tasty, juicy and sweet. But there are categories of people who, for various reasons, limit sugar in their diet. What's a sweet pie without sugar?

It turns out that anything is possible. For example, everyone’s favorite and widespread charlotte. Indeed, a very easy apple pie to make. It doesn’t require a lot of products or hassle, and it always turns out tasty and aromatic. And just such a sweet pie can be prepared without adding sugar.

The best sugar substitute without affecting the taste - this is honey. For those who maintain a slim figure and limit the consumption of flour, some of it is replaced with oatmeal.

The usual ingredients for making charlotte are:

  • half a glass of flour;
  • half a glass of rolled oats;
  • eggs – 2 pieces;
  • half a teaspoon of soda;
  • two tablespoons of honey;
  • apples – 3-5 pieces.

How to cook:

1. First you need to cook the apples. Remove the core with seeds and stalks from washed and dried fruits. Then cut into slices. Everyone chooses the thickness of the slices according to their taste. Place the chopped apples in a bowl with honey. If the honey is candied, you should first melt it. Mix the mixture well, you can add vanilla and cinnamon to taste. Leave to soak while the dough is prepared.

2. Break the eggs into a deep container, always dry and cool. Eggs should also be cold, refrigerated. Using a mixer or whisk, beat the eggs until a thick, high foam forms. To do this, it’s good to add a little salt before starting to beat. Continuing to beat, add flakes little by little. Next, pour baking soda or baking powder into the resulting mass and mix gently with a wooden spatula from bottom to top so as not to knock off the foam.

3. Prepare a baking dish. You can use a special one with split edges, you can use a cake pan, or you can just use a non-stick frying pan without a handle, wide and deep enough. Grease the mold with margarine or unrefined vegetable oil (it’s good to distribute just a little fat over the entire surface of the bottom and sides so that there are no dry areas left). And now sprinkle with semolina or breading mixture. It is better to use just such sprinkles than flour, since the flour, having soaked very quickly, will become part of the dough and may not give the desired effect.

4. Then pour the dough into the prepared pan, place the apples on top, pour over them with the honey in which they lay for soaking. And place in the oven, preheated to 170 degrees. Leave to bake for about half an hour.

5. As soon as the charlotte is browned, pierce it in the thickest place with a match or other wooden stick. If the stick remains dry, the cake is ready. Remove it with baking mittens and shake a little. The finished charlotte will immediately move from its place on its own.

6. Cool the pie and then place it on a plate.

CHARLOTTE WITHOUT SUGAR WITH KEFIR

Another sugar-free charlotte recipe is very similar to the first, but it turns out more satisfying and fluffy. The fact is that the test includes kefir. The rest of the ingredients are the same. The cooking procedure is also similar. The difference is that when kneading the dough, some honey is added to it. Otherwise, apples are soaked in honey in the same way.

The charlotte is laid in the same way. First the dough, then the apples and honey.

Kefir dough with the addition of honey will be more fluffy and rich, and will double in size when baked. Due to this, the fruits placed on top will seem to drown in the rising dough, and you will get a single mass of pie.

  • several apples, preferably tougher and juicier ones;
  • a glass of semolina;
  • a glass of kefir;
  • one egg;
  • three tablespoons of honey.

Cooking process:

1. Knead a liquid dough like sour cream from semolina, flour, eggs, kefir and honey. You can add half a teaspoon of baking soda or baking powder.

2. Pour chopped apples or pears into the dough and stir until they are evenly distributed in the mass.

3. Pour the resulting dough with fruit into the mold prepared in a known way and bake in the same way as the previous options.

All charlotte recipes are approximately the same. And it doesn’t matter whether you put the fruit first and then the dough or vice versa, or you can even mix all the ingredients in one container. This is a matter of the beauty of the pie itself, not its essence.

Some housewives do this: first lay out half the dough, then all the fruit, then the rest of the dough. There is a lot of room for creativity here. The main thing is that you can replace sugar with other sweet, but not harmful products, even flour can be partially or completely replaced. But the principle of making apple pie remains the same.

Charlotte with semolina and kefir will resemble manna, only lighter and less rich in composition, but not in taste. Having decided to exclude harmful foods, you can indulge in treats and desserts.

If you need to limit your sugar intake for some reason, you can bake a wonderful sweet pie without adding it. Charlotte will not become less tasty, but it will be healthy and light. And when cooking recipes without flour- also low-calorie.

Using cottage cheese will help give your favorite pie richness without extra calories.

So the diet can be tasty.

Diabetics also want to eat tasty, albeit not very healthy, food. One of these recipes is charlotte - a delicious pie that is quite simple to prepare. However, before consuming charlotte for type 2 diabetics, it is recommended that you familiarize yourself with the general rules for preparing this pie, as well as with the various recipe variations.

Rules for baking for diabetes

Baking for diabetics must meet two rules: be healthy and tasty. In order to achieve this, you will need to follow a number of rules. First of all, wheat flour is replaced with rye flour, because the use of low-grade and coarse flour does not affect glucose levels in any way. Making charlotte without sugar involves:

  • refusal to use chicken eggs for kneading dough or reducing their quantity to a minimum. However, when boiled, their addition as a filling is acceptable;
  • butter is replaced with vegetable oil or, for example, margarine. The lower the concentration of fats, the better;
  • Instead of sugar, it is recommended to use any substitute: stevia, fructose. The more natural the product is, the better;
  • The ingredients for the filling must be selected especially carefully. For example, it should not be sweet fruits, berries, or other high-calorie foods that can cause an increase in sugar levels.

An important rule is to control the calorie content and glycemic index of baked goods directly during the cooking process (this is very important for type 2 diabetes).

It is also advisable to avoid preparing large portions, which will prevent overeating and consumption of stale foods.

Charlotte recipes for diabetics

Charlotte with apples

To prepare the most common charlotte with apple, use one egg, four apples, 90 g. margarine, cinnamon (half a tsp). We should not forget about the four tbsp. l. honey, 10 gr. baking powder and one glass of flour.

The process of making charlotte with apples without sugar is extremely simple: margarine is melted and mixed with preheated honey. Then eggs are beaten into the margarine, baking powder is added, as well as ingredients such as cinnamon and flour - this is necessary to obtain the dough. Simultaneously:

  1. Place the fruits in a suitable baking dish and pour in the dietary dough;
  2. The charlotte should be cooked in the oven for 40 minutes. It is advisable that the temperature be no more than 180 degrees.

Considering that there is no stage of beating sugar and eggs, the apple charlotte will not turn out quite fluffy. Despite this, it will be 100% tasty due to its aroma and freshness.

Pie with kefir and cottage cheese

A variation of the classic charlotte recipe for diabetics is baking with the addition of cottage cheese and kefir. For this we use: three apples, 100 gr. flour, 30 gr. honey, 200 gr. cottage cheese (5% fat is the best option). Additional ingredients are 120 ml of low-fat kefir, one egg and 80 g. margarine.

You can prepare this delicious recipe as follows: peel the apples and cut them into slices. Then they are fried with the addition of butter and honey. This must be done in a frying pan that is suitable for baking. Frying should take no more than five to seven minutes.

The dough is prepared from ingredients such as cottage cheese, kefir, flour and egg, which are beaten with a mixer. Next, the fried fruit is poured into the dough and the charlotte is baked in the oven. It is recommended to do this for no longer than 30 minutes at a temperature of no more than 200 degrees.

Baking with rye flour

Sugar-free charlotte can also be prepared with rye flour. As you know, the latter is healthier than wheat due to the fact that its glycemic index is lower.

To prepare the pie, a diabetic will need to use:

  • 100 gr. rye flour and an arbitrary amount of wheat;
  • one chicken egg, which can be replaced with quail eggs (no more than three);
  • 100 gr. fructose;
  • four apples;
  • a small amount of margarine for greasing.
.

The cooking process begins by whisking eggs and fructose for five minutes. Then sifted flour is poured into this composition. At the same time, the apples are peeled and cut into small pieces, which are mixed with the dough. The greased form is filled with dough. The temperature should be no more than 180 degrees, and the baking time should be about 45 minutes.

Multicooker recipe

A diabetic diet may include charlotte, which is cooked not in the oven, but in a slow cooker. This non-standard recipe will allow a diabetic to save time and also diversify the diet. Another feature of baking in this case is the use of oatmeal, which can act as a complete replacement for flour.

The ingredients for making this charlotte are: five sugar substitute tablets, four apples, one protein, 10 tbsp. l. oatmeal. Also use a small amount of flour and margarine for greasing.

The cooking process is as follows:

  1. the whites are cooled and whipped together with a sugar substitute until foamy;
  2. apples are peeled and cut into slices;
  3. flour and oatmeal are added to the proteins and mixed carefully;
  4. Combine the dough and apples and place in a pre-greased bowl.

To fully prepare baked goods, the multicooker must be programmed to the “baking” mode. Usually 50 minutes are enough for this, after which it is recommended to wait for the pie to cool. Only after this will it be completely ready for use.

How to properly consume such pies?

For people with diabetes, baked goods, even those prepared with the addition of healthy ingredients, should be consumed in minimal quantities. For example, one medium piece (about 120 grams) per day will be more than enough. At the same time, charlotte should not be consumed in the morning or before bedtime, so the ideal time for this is lunch or an afternoon snack.

Nutritionists and endocrinologists recommend consuming this type of baked goods along with unsweetened tea, a small amount of milk, and other healthy drinks (for example, natural juices). This will replenish energy reserves, as well as fill the body with vitamins and mineral components. If, after eating charlotte, a diabetic experiences a deterioration in health and other unpleasant symptoms, it is recommended to check the sugar level.

It is generally accepted that a diabetic table cannot include various pastries and sweets, although this is fundamentally wrong. Many desserts are allowed for diabetes, the main thing is to prepare them correctly and replace some foods.

Charlotte without sugar is one of these dishes. Moreover, the number of recipes is not inferior to the dessert tables of a healthy person. Charlotte with apple, pear, rhubarb, in general, there are many variations.

In addition, every diabetic patient should know the glycemic index of the foods he chooses when using recipes. This indicator directly affects blood sugar levels. That is why this article provides not only recipes for various charlottes, but also considers the term glycemic index, and based on it, only healthy recipes are collected.

Glycemic index

The glycemic index (GI) is an indicator that affects the flow of glucose into the blood after consumption. Moreover, it can vary depending on the cooking method and consistency of the dish. Diabetics are prohibited from drinking juices, even those from fruits that have a low GI. All this is due to the fact that such products lack fiber, which serves as a uniform supply of glucose to the body.

There is also one more rule - if vegetables and fruits are brought to the consistency of puree, then their digital GI equivalent will increase. But this does not mean that you should completely abandon such dishes, just the serving size should be small.

When choosing products, you must rely on the following glycemic index indicators:

  1. Up to 50 units – allowed in any quantity;
  2. Up to 70 units – use is allowed in rare cases;
  3. From 70 units and above – under the strictest prohibition.

Below are the products that are needed to make charlottes, taking into account their glycemic index.
